Fresh Berry Salad

I was craving something fresh and cool – but nothing too sweet and nothing overly savory.  Berries are always refreshing and abound in the Pacific Northwest this time of year.  Just as important as the succulent, juicy, and astounding flavor these perennial flowering fruits impart, is their beauty.  Berries truly are gorgeous in every way.

Berries paired with the intoxicating aroma of fresh basil and the tongue twisting bite of fresh basil make a delightful summer salad, I must say.  And, drizzled with a splash of uniqueness, I was impressed.

Fresh Berry Salad

1 c. fresh strawberries, sliced
1 c. fresh blueberries
1/2 c. fresh blackberries
1/2 c. fresh raspberries
1 handful fresh basil, chopped
1/2 c. fresh feta, crumbled
A small drizzle of Coconut Secret Coconut Nectar (for a unique sweetness)… and..
The tiniest splash of vanilla extract for a surprising and familiar spin for the taste buds

Gently toss all ingredients together and enjoy.
