Breakfast has started to become one of my very favorite times of day. Rather than simply a term to define a morning meal, this day break tradition has become both a time of reflection for me, as well as a time to enjoy and socialize in my surroundings.
Whether the socializing involves deep contemplative matter or hysterical laughter and smiles, this meal is a morning work of art.
That artwork, I believe, is best shared with others.
2 Tbs. Kerrygold butter
1/2 sweet onion, diced
1 c. fresh asparagus, chopped
4 pastured eggs
1 large tomato, sliced
2 avocados, peeled and sliced
Sea salt and pepper
In a large skillet, heat the butter over medium heat. Add the diced onion and cook until translucent. Add asparagus and stir until the asparagus begins to soften.
In a separate bowl, whisk the eggs together and then add to veggies and butter. Continue to stir and toss until completely cooked. Season appropriately with sea salt and pepper.
Top with sliced tomatoes and avocado. Once again, season with scrumptious salt.
