At a recent bbq this summer, as we were noshing on grilled sweet corn, bbq brats, and then swimming in ice cream to follow, I had an epiphany: Sweet Corn Ice Cream. I mean, why not? We all love the super succor of fresh sweet corn (GOOD, sweet corn) and the creamy goodness of vanilla ice cream. Let’s combine them…add a little texture to the mix, some salt, and then even sprinkle with crunchy peanuts.
This just may be the next bbq favorite!
Sweet Corn Ice Cream
1 3/4 cup heavy whipping cream
1 can sweetened condensed milk
14 oz. creamed style corn
1/4 tsp. sea salt
Beat together the cream and sweetened condensed milk until ultra thick and fluffy. This will take several minutes. You want stiff peaks to form. Then gently beat in the corn and salt.
Transfer to a container to freeze for several hours before scooping!
