While I love the marriage of chocolate and peanut butter in any way, shape, or form, sometimes all the credit just needs to be given to the nuts in our lives (literally and figuratively).*
Thus, these cookies are strictly peanut butter – ALL peanut butter: smooth and creamy with peanut butter chips!!!!
Sweet, creamy peanut butter with a little texture. Swoon.
*Yes, I know peanuts are technically legumes, but for the sake of prose, let’s go with “nuts” this time.
Strictly Peanut Butter Chip Cookies
2 cups smooth peanut butter (16 oz)
8 Tbs. butter, room temperature (1 stick)
3 large eggs
1 1/2 cups white sugar
1 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla extract
1/2 tsp. sea salt
2 cups all purpose flour
1 1/2 cups peanut butter chips
Preheat the oven to 355 degrees.
Cream together the peanut butter and butter until nice and smooth.
Add the eggs and beat until fluffy – 2-3 minutes.
Next, add the sugar, baking soda, baking powder, vanilla, and salt. Beat again until well mixed.
Add the flour 1 cup at a time and mix until fully combined.
Fold in the peanut butter chips.
Line cookie sheets with parchment paper.
Form the dough into 1″ balls and place on the paper.
Using the back of a glass, flatten each dough ball into a disc.
Bake for about 20 minutes, until just barely turning golden brown.
Remove the cookies from the oven and cool for at least 30 minutes.
Enjoy with a giant glass of milk!
These are soft, chewy, so full of delicious peanut butter goodness and sweet morsels of peanut butter chips!
