Well, even though I “thought” I had invented something new with the addition of sweetened condensed milk and cornstarch to a cookie, eliminating the sugar and eggs – which results in a super silky and puffy baked treat – yet realized I was not the first to have this epiphany, it’s not going to stop me from baking ands sharing these utterly delicious, soft and supple dessert cookie treats: Dark Chocolate Chunk Balsamic Cookies.
Dark Chocolate Chunk Balsamic Cookies
8 Tbs. butter, room temperature
12 oz. sweetened condensed milk
1 Tbs. cornstarch
3 tsp. baking soda
1 tsp. sea salt
1 tsp. vanilla extract
1 1/2 cups all purpose flour
10 oz. dark chocolate chunks
2 Tbs. balsamic glaze
Preheat the oven to 375 degrees.
Cream together the butter and sweetened condensed milk until cream and fluffy. Add the cornstarch, baking soda, salt, and vanilla and cream again for a few minutes.
Mix in the flour, 1/2 cup at a time. Then, fold in the chocolate chunks and balsamic glaze.
Line three baking sheets with parchment paper and scoop 1″ sized balls (with a melon baller) on to the parchment paper.
Bake the dough balls for about 15 minutes, until puffy and just barely browning.
Remove from the oven and cool for 15-30 minutes.
Bite into and enjoy the super sweet, silky texture of these cookie amazingnesses.
