After such sweet success with my Quick Triple Berry Jam, I decided to try out something just a touch more savory.
I wanted a bit of the umami flavor of mellow miso to swing softly with the succor of dried fruit and fresh citrus juice.
And, I wanted just a touch of red wine.
And, most importantly, I SO wanted to pull out my perfectly pulchritudinous copper pot!

Thus, I bring you a sweet and savory jam.

Apricot Orange Miso Jam
1 1/2 cup dried apricots, chopped
1/2 cup unsweetened dried cherries, chopped
2 Tbs. chopped candied ginger
1/2 cup red wine
1/2 cup apple juice
juice of 1 orange
juice of 1/2 lemon
1 tsp. ground anise seed
1/2 tsp. ground cloves
1/4 tsp. ground cinnamon
1 small bay leaf
1 Tbs. mellow white miso
Combine all ingredients except miso in a medium saucepan. Bring to a boil and then quickly reduce to a simmer. Cook on low, stirring often, until all the liquid reduces to a very thick syrup and the fruit is super soft, about 30 minutes. Add the miso and stir well. Continue cooking another 3-5 minutes until the mixture is of ultimate thickness. Remove the bayleaf.
Allow to cool and serve at room temperature ~ the possibilities are endless ~
