The peaches are amazing right now. Juicy, sweet, luscious…they seem to melt in your mouth.
I love the fact that as I walk by the fruit bins at the local market, the sweet aroma wafts through the air. Strolling through the streets of the local Peach Festival last weekend, the fragrance of peach everything brought a smile to just about everyone’s face.
Peach salsa is a favorite way to adorn just about anything. Fish, meat, eggs, salad, or eaten just on it’s own ~ it’s fragrant, fresh, and fantastic!
And, given my love affair with fresh basil, I had to combine the two.
Basil Peach Salsa
2 medium peaches, chopped (fresh, ripe, and fantastic!)
1 medium heirloom tomato, chopped
1/2 small red onion, finely diced
1 serrano or jalepeno pepper, seeded and minced
1 Tbs. fresh basil, minced
1 Tbs. white wine vinegar
sea salt
Combine all ingredients and gently toss. Allow to “marinate” at least 2 hours or overnight in the fridge to allow for the flavors to fully develop.
This will knock your socks off!
