Most people crave comfort foods in the way of pasta, mashed potatoes, casseroles, and often sweets.
For me, my comfort is WARMTH in food. I crave veggies and some protein.
I also have an affinity for chicken sausage. I’m not sure what it is about the product, but I just like it. And that’s that.
Thus, after a week of being displaced from our home due to a terrifying explosion beneath our parking garage, a long-standing power outage, and a fridge and freezer full of spoiled food, I needed something cozy and familiar.

Thus, I browned up some baby potatoes and chicken sausage with bell peppers. It was a much-needed treat and quite a delight!

So light, but so satisfying and filling.

Browned Butter Baby Potatoes and Chicken Sausage: sautéed baby potatoes, chicken sausage links, bell peppers, and plenty of salt and pepper.

Browned Butter Baby Potatoes and Chicken Sausage

2 Tbs. Kerrygold butter (it really is THE BEST)
4 links Organic Italian Chicken Sausage, sliced
1 lb. baby potatoes
1 large bell pepper, seeded and chopped
sea salt and pepper
fresh herbs and parsley

Heat the butter in a Dutch oven over low heat, until just beginning to bubble.
Add the sausage, potatoes, bell pepper, and salt and pepper.
Saute until golden brown and the potatoes begin to soften, stirring often. This will take about 10-15 minutes, with constant stirring. Cover in between stirring.

Plate and serve garnished with chopped Italian herbs and fresh parsley.
