Happy Easter!
The day is certainly about more than chocolate, sprinkles, and little bunnies.
However, it is often fun to celebrate the Rising with a splash of color and some glitter and glam.
Allow yourself a little fun and the day to be dazzled.
Bunny Cakes
Easy White Cake:
1 cup white sugar
1/2 cup butter
2 large eggs
2 tsp. vanilla extract
1 1/2 cups all purpose flour
1 3/4 tsp. baking powder
1/2 cup milk
Bunny Glaze:
1 cup powdered sugar
2 Tbs. milk
brightly colored sprinkles
bunny cookie cutter(s)
carrot cookie cutter(s)
spring cookie cutters
Preheat oven to 350 degrees. Grease a large sheet pan with butter and line with parchment paper.
In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
Bake for 20 to 30 minutes in the preheated oven, until an inserted toothpick comes out clean.
Allow the cake to cool for at least 30 minutes.
In a separate bowl, whisk together the sugar and milk until all clumps are gone and the glaze is smooth. Add a touch more sugar for something thicker.
Once the cake is cool enough to handle, cut out desired bunny cake shapes with Easter cookie cutters. Carefully transfer to a clean sheet of parchment and drizzle with the glaze and top with sprinkles.
