Well, it may be a little bit of a “cheater” recipe, but it’s still really, really fantastic! And, homemade tortellini is so much work, right? So, we can now classify this as “an easy weeknight meal.”
Simply pick up some pre-made spinach tortellini from the refrigerated section of the market, some butter, and some heirloom cherry tomatoes. Add some sea salt and a lot of black pepper, and wham bam, you’ve got an amazing meal!!!
Buttered Tomato Tortellini
1 lb. spinach tortellini
4 Tbs. butter (yes, it’s a lot, but it’s worth it)
1 pint heirloom cherry tomatoes
sea salt
LOTS of fresh ground pepper
Bring a large pot of water to a boil. Season with salt.
Boil the tortellini for 4 minutes.
Drain and set aside.
Meanwhile, melt the butter in a smaller pot over medium heat. Add the tomatoes and cook down for about 20 minutes. Season with sea salt and pepper.
Pour the broken down tomato sauce over the tortellini and top with additional black pepper.
