Needing to use my sourdough starter again this week (caring for this baby is stressful!), I opted for more than just a “bread.” I wanted something to constitute more of a meal for my honeypie. And, since he loves chicken, we all love pesto (it’s the besto) and NO ONE can turn down my homemade sourdough, the Chicken Pesto Sourdough Calzone Twist was born.
Chicken Pesto Sourdough Calzone Twist
1/3 Ancient Sourdough recipe (reducing the sugar in the starter and the recipe to 1 Tbs. each)
1/3 cup homemade pesto
1/4 cup shaved parmesan cheese
3 oz. boneless, skinless chicken breast, cooked and shredded
extra virgin olive oil
Preheat the oven to 375 degrees.
Toss together the shredded chicken and pesto until well combined.
On a floured surface, roll out the sourdough into one large circle-ovalish shape. Evenly spread the chicken pesto mixture over the dough, leaving about a 1″ border all around. Dust with cheese. Roll up, twist, turn, and fold.
Bake for about 40 minutes, until golden brown.
Drizzle with olive oil before serving.
