So, since we all love tacos, can we just create an all-in-one pan easy taco skillet stir-fry for a quick weeknight dinner?
Let’s agree, this recipe creation need not occur on Taco Tuesday. While it certainly CAN, let’s allow ourselves the easy of a chicken stir-fry, but with all the goodness of the infamous “taco” taste any night of the week!
Chicken Taco Stir Fry: toasty corn tortilla strips, taco seasoned ground chicken, fresh tomatoes, cilantro, crumbled Cotija queso, and toasted pepitas! YUM! 🤤🌮
Chicken Taco Stir Fry
2 Tbs. vegetable oil
20-30 small white corn tortillas, thinly sliced
sea salt
1 lb. ground chicken
3 Tbs. Homemade Taco Seasoning
1 cup fresh cherry tomatoes, halved
3/4 cup Cotija cheese, crumbled
1/2 cup toasted pepitas (pumpkin seeds)
fresh cilantro
In a large pot or Dutch oven, heat the oil over medium-high heat.
Add the tortilla slices and salt. Coat the tortillas with oil and sauté, stirring often, until crispy.
Remove from the pot and allow to cool and crisp even more.
Add the ground chicken to the same pot (adding additional oil, if need be).
Break apart with the back of a stirring spoon, seasoning with the Taco Seasoning, and mixing into seasoned crumbles.
Assemble the stir fry by mixing the toasted/roasted tortillas with the seasoned ground chicken and fresh tomatoes. Top with cheese, pepitas, and fresh cilantro!
