Do you really need an excuse to eat chocolate chip cookies or cheesecake any day of the week, or any time of day for that matter?
I don’t think so.
And, to take it a step further, I don’t think you even need an excuse to eat them together ~
Chocolate Chip Cookie Cheesecake Bars
8 Tbs. butter, melted
8 oz. chocolate chip cookies
8 oz. cream cheese, room temperature
1/2 cup white sugar
1 egg + 1 egg yolk
1 tsp. vanilla extract
1 Tbs. melted chocolate (any variety is okay)
Preheat oven to 350 degrees.
Using a food processor, pulse the cookies into fine crumbs. Combine those with the melted butter and press into the bottom of a parchment lined (or just buttered) baking pan.
In a separate bowl, whip together the cream cheese, sugar, eggs, and vanilla until smooth.
Top the cookie crust with the cheese cake mixture.
Finally, dab the melted chocolate across the top of the cheesecake and swirl around with a toothpick.
Bake for about 1 hour, or until the cheesecake is set when gently shaken and begins to turn slightly golden brown.
Chill for at least 4 hours before slicing.
