Chocolate Coconut Macaroon Cake Bars
1 1/2 cups Chocolate Coconut Macaroon Truffles, processed into a fine crumb
2 cups all-purpose flour
1 1/2 tsp. baking powder
pinch sea salt
4 large eggs, room temperature
1 1/2 cups sugar
1/2 cup butter, cubed
1 cup whole milk
1 Tbs. vanilla extract
1 Tbs. vegetable oil
3/4 cup sweetened, shredded coconut flakes
Preheat the oven to 350 degrees.
Line a square baking dish with parchment paper.
Whisk together the truffle crumbs, flour, baking powder, and salt. Set aside.
Beat together the eggs until aerated, about 1 full minute. Add the sugar and continue beating until expansive, doubled in size.
Place the butter and milk in the microwave or on the stove and lightly melt – then cool (do not allow to boil or bubble).
Gently mix together the flour combo, egg mix, and butter-milk, combination, in batches, until smooth. This can be done in a bowl or with the food processor (from the crumbling of the truffles).
Transfer to the parchment-lined baking pan. Sprinkle with coconut flakes and bake for 50-60 minutes, until the coconut is sweet, aromatic, and toasty brown, and a toothpick inserted comes out clean.
Remove from oven and cool for several hours before slicing, serving, and enjoy while floating among the clouds of your ever-blue skies.
