I have not much to say, other than I’m bored inside. I long for casual walks in the sunshine, hikes in the mountains, the warmth against my skin…
So, to entertain myself, I bake. – and bake, and bake, and bake.
This time the cookies are both gluten-free and dairy-free. Watch out you chocolate coconut lovers!
Chocolate Coconut Texture Cookies
Chocolate Coconut Texture Cookies (Gluten Free, Dairy Free)
1 cup liquid coconut oil
3 eggs
2 cups sugar
1/2 cup honey
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. vanilla extract
1/4 tsp. sea salt
1 cup coconut flour
1 cup rice flour
3/4 cup unsweetened cocoa powder
Preheat the oven to 350 degrees.
Cream together the oil, eggs, sugar, and honey. Add the baking soda, baking powder, vanilla, and sea salt. Beat until well combined.
Stir in the coconut flour and rice flour, as well as the unsweetened coconut.
Form into golfball sized mounts and place on parchment lined cookie sheets.
Using a textured piece of “something,” I had a textured foil lid from my coconut flour, press and flatten texture into the back of the cookie balls.
Bake for 14 minutes.
Remove from the oven and allow to cool.
