1/2 cup solid coconut oil, room temperature
14 oz. sweetened condensed milk
1/2 cup cane sugar
1 tsp. vanilla extract
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. kosher salt
2 1/2 cups all-purpose flour
1 1/2 cups chocolate macadamia nut clusters, broken into pieces
Preheat oven to 375 degrees.
Cream together the coconut oil, sweetened condensed milk, sugar, and vanilla until smooth and creamy.
Add the baking soda, baking powder, and salt. Mix well.
Add the flour, 1/2 cup at a time, until well incorporated.
Fold in the broken clusters.
Form into 1″ balls and place on a parchment-lined cookie sheet.
Flatten into discs.
Bake for 15-18 minutes, until the edges begin to brown.
Remove from oven and cool before consuming.
