Pesto is one of those marvelous things in life that can be served with just about anything.
Obviously basil pesto is the most common and well known accoutrement when it comes to the saucy game.
However, there is so much more to the world of pesto than a simple Italian basil, parmesan, and pine nut puree.
Pesto is the besto and can be made chunky or smooth, but also with any fresh herbs and spices imaginable, along with any and every nut around.
Thus, a chunky mix of fresh cilantro, basil, and mint, with a touch of lime and plenty of macadamia nut create the perfect refreshingly green sauce to step up your standard pesto.
Serve tossed with pasta, rice, or potatoes…
… or over some colorfully roasted veggies.
Chunky Cilantro Mint Macadamia Pesto
1/2 cup chopped macadamia nuts
1 cup loosely packed cilantro
1/2 cup loosely packed basil leaves
1/4 cup loosely packed mint leaves
1/4 cup extra virgin olive oil
1/4 cup grated parmesan cheese
juice of 1 lime
1/4 tsp. sea salt
Combine all ingredients in a high speed blender and purée until slightly chunky, but mostly smooth.
