Even when the going gets rough, sometimes you just have to put on your “cool” hat.
Amidst my “temporary” transition – isn’t all transition temporary? – I’m struggling to cook, clean, and even be myself.
However, I’m a “cool cat” at heart and certainly still have to please myself from time to time.
…Enter “Cool Cauliflower” from Stahlbush Island Farms.
It’s super duper easy and it’s super duper amazing.
Colorful.
Tasty.
Tantalizing.
And just for the record, poached eggs DO NOT work out well on an old electric stovetop.
Cool Cauliflower
Serves 1
1 bag Stahlbush Island Farms frozen “Cool Cauliflower“
1/4 cup water
2 pastured eggs, poached
1 Tbs. extra virgin olive oil
coarsely grated sea salt and pepper
In a medium saucepan, combine veggies and water. Bring to a boil and continue to “cook” until the cauliflower is no longer frozen and is piping hot. Drain water and set aside.
Meanwhile, carefully and perfectly poach the pastured eggs.
Serve eggs atop the rainbow of colored veggies and drizzle with oil, generously sprinkling with salt and pepper.
