A croque monsieur is a baked or fried boiled ham and cheese sandwich. The dish originated in French cafés and bars as a quick snack. A croque madame is a variant of the dish topped with a fried egg. The name is based on the verb croquer and the word monsieur.

Galette from the Norman word gale meaning flat cake is a term used in French cuisine to designate various types of flat round or freeform crusty cakes, or, in the case of a Breton galette, a pancake made with buckwheat flour usually with a savoury filling. 

All you need is a homemade pie crust, Swiss cheese, ham, a few pickles, a touch of mustard, a fresh egg, and sea salt and plenty of pepper with fresh thyme.
Bake at 425 degrees until the egg is almost set.
