For years and years and years I told myself I had no need for a KitchenAid mixer.
Yes, that was the “story” I was telling myself.
Even though I wanted one sooooo badly.
They are made in such miraculous colors ~ vibrant red, retro aqua, pastel pink…and shiny blackberry.
I now have the blackberry.
It’s gorgeous – although I do stick to my guns and keep it hidden in the cabinets. Nothing, I’ll repeat that, NOTHING is on display on my kitchen counter. I like simplicity, clean lines, and absolutely no clutter.
I like my space.
In any case, ever since I purchased my KitchenAid, I believe I’ve used it just about every day.
I’m a bread baking fanatic, a pasta making pro, a mixing maiden, a shredding queen, and a spiralizing princess. Today, I put on my “sheeting” tiara.
KitchenAid announced a year ago they would be releasing a vegetable sheeting tool.
I’ve been counting the days and now I finally have mine in hand!
I struggled a bit on my first try – my cucumber skins were too tough.
But I’ll continue to give it a go – without a doubt – and create some super fabulous sheeted recipes to share soon enough.

Cucumber Sheets & Homemade Honey Mustard
1 large cucumber
juice of 1 fresh lemon
1 Tbs. apple cider vinegar
1/3 cup raw honey
3 Tbs. Dijon mustard
1/2 tsp. sea salt
black pepper, to taste
1/3 cup + 2 tsp. extra virgin olive oil
Peel the cucumber, cut in half, and “sheet” with the KitchenAid. Alternatively, you can create cucumber “noodles” with a vegetable peeler. Set aside and allow to “sweat” with a little salt.
Meanwhile, combine the lemon, vinegar, honey, mustard, salt, pepper, and oil in a medium jar with a tightly fitting lid. Shake vigorously until well emulsified.
Drizzle over the cucumber, top with additional salt, and fresh rosemary, if desired.
