Fanny’s Rice Pudding
8 cups whole milk
1 1/3 cup sugar
1 cup white rice (uncooked)
1 tsp. sea salt
1 lemon, zest and juice
1 tsp. vanilla extract
1/4 tsp. nutmeg
3 large eggs, whisked
1 cup rasins
1/2 cup dates, chopped
Preheat the oven to 300 degrees. Mix the milk, sugar, rice, salt, lemon, vanilla, and nutmeg together in a medium baking dish. Bake, uncovered for three hours. During the first hour, stir three times to prevent the rice from settling. After one hour, stir in the raisins and dates. About 30 minutes before the pudding is finished, stir in the whisked eggs.
