A mini-crock of French onion soup with deliciously rich, oniony, and beefy broth, a crispy crouton on top, and melted Gruyere cheese oozing over the sides – the classic comfort of French Onion Soup. But, deconstructing this soup and turning it into a comforting “grilled cheese” sandwich recipe creates a new concept and homemade favorite: French Onion Soup Grilled Cheese.

French Onion Soup Grilled Cheese

4 Tbs. butter
1 large yellow onion, thinly sliced
sea salt

½ lb. finely chopped beef

4 slices “croissant bread”
8 slices Gruyere cheese

fresh thyme

Melt the butter over medium heat.
Slice the onions and sauté them in butter. This is the most important step – the goal is to sauté the onions into a uniform, caramel color.


REMAIN BY THE STOVE AT ALL TIMES. 

Season with plenty of salt.

Add the chopped beef and cook and stir until tender and cooked through.

Remove the onions and beef from the pot, reserving the juices.

Brown each slice of bread in the simmering juices, on both sides.

Top with slices of cheese – melt – then top with the cooked onions and beef, top with another slice of cheese grilled bread.

Serve sprinkled with fresh thyme.
