It’s been a while since I’ve entertained the Paleo, gluten-free, grain-free baking side of my character in the kitchen. Often times I feel as though it takes a little too much work. Today, however, I reminded myself that this is not the case at all! In just a few skinny minutes, I whipped up some amazingly refreshing and aromatically intoxicating coconut flour cookies! Be warned: these are just as addictive as the mojito you were sipping last Saturday: Gluten-Free Coconut Mojito Meltaway Cookies.
Gluten-Free Coconut Mojito Meltaway Cookies
3 large eggs
1/2 cup sugar
1/3 cup coconut oil
1 cup coconut flour
1/4 tsp. baking powder
1/4 tsp. sea salt
juice and zest of 1 fresh lime
1 Tbs. fresh mint leaves, minced
Preheat the oven to 325 degrees.
Beat together the eggs, sugar, and coconut oil until fluffy.
Sift in the coconut flour, baking powder, and salt. Using a spatula, stir until well combined.
Then stir in the lime and mint.
Form into small dough balls and flatten with the back of a measuring cup, placing on top of a parchment lined baking sheet.
Bake for 15 minutes before removing from the oven and allowing to cool.
