It gives us the fuel we need to do the things we want with the people we love. Food can also help you feel good when you’re feeling less than average. That’s how I discovered my joy for food.

An autoimmune disorder threw my life off balance. I went from happy and healthy to in-and-out of the hospital struggling with conventional medicine. Nothing helped consistently until I discovered the power of a clean diet that is rich in whole foods and avoids refined sugar. It helped me reclaim my energy and return to good health.

Gluten-Free Korean BBQ Beef & Kimchi Pizza

1 pkg. Kevin’s Naturals Korean BBQ-Style Beef
1/4 cup crumbled Feta cheese
1/2 cup Quick Pickled Kimchi*
Gluten-Free Pizza Crust**

Preheat the oven to 400 degrees.

Prepare the Gluten-Free Pizza Crust** as directed. Bake on a parchment lined baking sheet for 15 minutes, until golden brown.

Top with the Feta cheese and return to the oven to bake for an additional 4-5 minutes, until slightly melted.

Remove from the oven.

Top with the Korean BBQ-Style Beef (strained from too much sauce), the Quick Pickled Kimchi*, and any additional fresh pepper slices.

Slice and serve immediately.

*Quick Pickled Kimchi:
2 Tbs. granulated sugar
1 Tbs. sea salt
1 cup mixed veggies (pickles, shredded cabbage or SAUERKRAUT***, arame, cucumber, green onion, jalapeño, Scotch Bonnet (CAREFUL) pepper, etc), sliced or shredded
2 tsp. Sriracha sauce
1 tsp. olive oil

Toss all ingredients together. Let stand for 20 minutes.

**Gluten-Free Pizza Crust:
2 tsp. dry active yeast
2 tsp. granulated sugar
1 cup warm water
2 cups gluten-free flour (1:1 ratio with regular flour-Pamela’s or Bob’s Red Mill)

1 large egg
2 Tbs. olive oil
1/4 tsp. sea salt

In a medium bowl, combine the yeast, sugar, and warm water. Let sit for 10 minutes, to allow the yeast to “bloom.”

Stir in the gluten-free flour, egg, olive oil, and salt, until well combined and forming into a nice dough ball.
Let rise for 5 minutes.

Roll out on a well floured surface into a rustic round or oval.

Follow above instructions to finish.
