I’ve grown to enjoy a super hearty breakfast. Never before a savory breakfast eater, over the past few years I’ve shied away from fruits and nuts (my previous go-to morning meal) and drifted, migrated, and evolved into a warm and savory breakfast kind of girl. Excuse me, kind of WOMAN.
Now that I utter the words above, I realize that the previous few statements are not entirely accurate. I’ve actually always preferred more of a savory bite in the morning, but I think I have begun to truly appreciate the warmth and depth of flavorful creations each morning more than ever.
With a bit of Savory Veggie Mish-Mash leftover from a day or two before, I melted my Kerrygold in my cast iron, fried up a few eggs and delightfully bright bell peppers, and had myself some “Good Morning Grub.”
Good Morning Grub
1 c. Savory Veggie Mish-Mash
1 Tbs. Kerrygold butter
2 pastured eggs
1/2 bell pepper, sliced
Sea salt and pepper
In a medium cast iron skillet, melt butter over medium heat. Add the eggs and bell pepper, scrambling and sautéing until glistening. Season generously with salt and pepper.
Add a dash of baby spinach for a little extra green to your morning.
Enjoy.
Prior to paleo, I was an overnight oats or granola w/ nut milk or yogurt girl — always sweeter stuff. Now, I’m a total sucker for a savory breakfast too. It’s the best!
Absolutely. Savory is the BEST! I just enjoyed TOMORROW’S post for breakfast this morning. It was truly amazing on this cold, foggy morning. Pumpkin Chorizo Chili…stay tuned 🙂
