Dark Chocolate Peppermint Brownies
1 cup pecanĀ butter (roasted almond butter will work too)
1/4 cup dark cane sugar
2 eggs
1/4 cupĀ melted butter or ghee
1 tsp. vanilla
1/2 cocoa powder
1/2 tsp. baking soda
1/2 cup crushed peppermint candies (green and red), divided
Preheat the oven to 350 degrees. In a large bowl, whisk together melted butter and eggs, and then stir in the pecan butter, sugar and vanilla. Fold in the cocoa powder and baking soda until well combined. Finally, stir in half the peppermint candies.
Pour the batter into a greased 9-inch baking pan. Bake for 35 minutes, until the brownies are done, but still soft in the middle.
Sprinkle the remaining peppermint candy “dust” on top of the brownies while they are cooling.
