Oh, have you ever had a CAR BOMB? Not necessarily chocolate, but it’s a REALLY good thing too! I think a Car Bomb alongside these Irish Stout Chocolate Brownies should be the way to go – any day!

The texture is an interesting combination of fudge, mousse, candy, and traditional brownies. They are decadent AND light and fluffy.

Irish Stout Chocolate Brownies
1 cup all-purpose flour
3/4 cup unsweetened cocoa powder
1/2 tsp. sea salt
6 Tbs. butter
16 oz. bittersweet chocolate chunks
4 large eggs, room temperature
1 cup white sugar
1 cup Irish stout beer, room temperature (minus the foam in the measurement)
Preheat the oven to 375. Line a 9×13″ pan with parchment paper.
In a medium bowl, whisk together flour, cocoa powder, and salt until evenly combined. Set aside.
Melt butter and bittersweet chocolate in a double-boiler over very low heat, stirring constantly until melted. Remove from heat.
In a large mixing bowl, beat eggs and sugar on high speed until light and fluffy, about 3 minutes.
Add melted chocolate mixture to the eggs and sugar mixture, beating until combined.
Beat the reserved dry ingredient mixture into the melted chocolate mixture. Whisk in the Irish stout beer by hand. The batter may seem a bit thin.
Pour the batter into the prepared baking pan.
Bake 25 – 30 minutes, until a toothpick inserted in the center comes out clean.
Let the brownies cool, uncovered, to room temperature before slicing and serving with a giant Car Bomb! (or ice cream will do).
