A little of this…a little of that…
I found myself in the kitchen creating again. Only because I had some leftover key limes, a whole bunch of coconut flour on hand, and an awful lot of vegan, gluten-free friends. Oh, and don’t get me wrong, there’s always some rum on the shelf at our house!
Key Lime Coconut Rum Balls
Hmmm…I didn’t measure and didn’t really pay any attention this time.
Do your best:
1 cup coconut oil, melted
1 cup coconut flour
3/4 cup powdered sugar
juice and zest for 4 key limes
2 Tbs. rum
coconut milk
Combine the oil, flour, sugar, juice and zest, and rum. Form into a nice dough and let sit for about 60 minutes, until the coconut oil begins to harden again.
Line a baking dish with parchment paper and press the dough into the dish. Drizzle with coconut milk and refrigerate for several hours before slicing – crumbly, but still really good! Who needs a cocktail now?
