For many years I was not much of a fan of dill weed.
Then very recently, out of the blue, I decided to give it another go – and I fell in love, again. (Yes, I’ve fallen for food before – I’m an easy catch in many ways, I suppose – VERY difficult in others). In any case, some evenings call for a suitable serving of lemon scented power grains with a touch of baby dill: Lemon Dill Power Grains.
Lemon Dill Power Grains
1 cup mixed grains and lentils, dried (barley, peas, lentils)
2 Tbs. extra virgin olive oil, divided
1 cup fresh spring peas (or frozen)
sea salt and pepper
1/4 cup Preserved Lemons, rinsed and sliced
2 green onions, chopped
2 Tbs. fresh baby dill, chopped
Bring 3 cups of water to a boil in a large pot. Add 1 Tbs. oil and the mixed grains. Again, bring to a boil and then reduce heat to a simmer. Cover and cook on very low heat for about 15 minutes, until soft.
Stir in the peas, plenty of salt and pepper, Preserved Lemons, onions, and dill.
Serve immediate and dress with remaining oil.
The addition of feta cheese would be absolutely phenomenal here!
