It’s a pesto. It’s a spread. It’s a sauce. It’s a butter. It’s an accoutrement.
It’s a crumble.
It’s akin to the tantalizing texture topping a summer berry cobbler or crisp, only savory.
It’s pretty much everything all in one…and it’s delicious…
Can anyone else name a well known seed that’s been masquerading as a nut?
Oh uh, by the way, the answer is, the Brazil nut.
There you have it ~ it’s a pesto/spread/sauce/butter/crumble seeming to impart the richness and creamy goodness of ground nuts, yet it’s actually masquerading as that of a seed.
All that aside, with a bit of lemon and a whole bunch of oregano, you’ll be dreaming of all the possibilities of how to use this accoutrement.
I like to think I can just slather it across my tongue with a giant spoon.
Or perhaps one time…just this once, I’ll serve it over fresh potato gnocchi.
Lemon Oregano Brazil Nut Crumble
1 heaping cup Brazil nuts, soaked for about 1 hour and drained
1 giant handful fresh oregano
1 cup lemon infused olive oil
1/2 cup shredded parmesan cheese
zest of 1 lemon
sea salt and lots of pepper
Combine all ingredients in a food processor and puree until somewhat crumbly, and somewhat smooth…
