There’s nothing better than the flavor combination of lemon, fresh blueberry, and a hint of vanilla.
Well, there may be other things – unrelated – that hold their own, but honestly, this truly is one of the best aromatic and palate amalgamations on earth.
You’ll have to trust me, if you’re on the fence.
And, although there may not be much vanilla involved in this particular pie recipe, the vanilla sense and the sweet depth of white chocolate melting in your mouth makes this a pie for a special celebration: Lemon Zest Blueberry White Chocolate Pie!

Lemon Zest Blueberry White Chocolate Pie

Crust:
16 Tbs. ice cold butter, cubed into 1/2″ squares (2 sticks)
3 1/2 cups all purpose flour
2 large eggs
1 Tbs. apple cider vinegar
juice and zest of 1 fresh lemon

1 pinch salt
2-3 Tbs. ice cold water

Preheat the oven to 375 degrees. Using your fingers, toss the butter cubes in the flour to coat. Flatten and press to immerse in the flour – handling as little as possible. Stir in the egg and vinegar, lemon juice and zest (and salt) with your fingers and add a little water…a touch at a time…until the texture is just right for flaky dough. Remember, the more you touch it, the tougher it will be. (You can definitely achieve the same results with a food processor, using the pulse setting).
Form into two balls and place each between two layers of parchment to roll out into two discs.

Filling:
1 cup white chocolate chips
18 oz. fresh blueberries
3/4 cup blueberry jam

In a large bowl, carefully toss together the fresh berries and jam, until well combined and all the berries are coated.

Assembly:
Carefully lay one pie crust disc into a pie plate, folding under the edges and fluting the sides for a decorative effect. Sprinkle with white chocolate chips.
Creating your own sort of design atop the second disc – do so – and then lay over the blueberry filling. Make sure there are a few slits in the top pie crust to allow the steam to escape while baking.
Bake for about 40 minutes, until the crust is golden brown.

Allow to cool and set before slicing.
