But I’ve had something else a little green on my mind as of late. Just a little teeny, tiny, leprechaun treat.
Yes, these little matcha green cookie puffs are miniature leprechaun size…so you’ll have to double, triple, quadruple the stash in order to get any satisfaction from the sweet green delights.

Matcha Ginger Rose Cookie Puffs
2 Tbs. coconut flour
1 pastured egg
1 tsp. rosewater
1/2 tsp. powdered matcha
1/8 tsp. vanilla salt (or sea salt + vanilla extract – don’t skip the vanilla!)
1/8 tsp. powdered ginger
1/8 tsp. baking powder
coconut oil
Grease the inside of a small (think leprechaun serving) ramekin with coconut oil.
In a separate bowl, whisk together remaining ingredients.
Transfer to the prepared ramekin and microwave on high for 90 seconds.
Yes, that’s really all it takes.
