I wanted to make something SUPER special for my chicken loving, mustard loving, and olive loving better half. Yes, all of those things are on his list of yumminess. Thus, with some bone-in chicken lurking in the freezer and all the other favorites on hand: Mustard Olive Marinated Chicken.
Mustard Olive Marinated Chicken
2 Tbs. butter
2 bone-in chicken wings (with skin)
1/4 cup mustard
1 tsp. olive oil
sea salt and pepper
1/4 cup pimento stuffed olives
2 cups black riced, cooked
Preheat the oven to 425 degrees.
Marinate the chicken in the mustard, olive oil, sea salt, and pepper for at least 30 minutes, if not overnight.
Melt the butter in a medium Dutch oven over medium heat.
Add the chicken, skin side down and sear for about 3-5 minutes on each side, until crispy brown.
Transfer to the heated oven, cover, and cook for about 30 minutes, until the chicken is cooked through.
Serve plated with the black rice, olives, and additional salt and pepper, and any additional butter or chicken juices lurking in the Dutch oven.
