I don’t think she believed I’d follow through when I told her I was brining her “Nacho Tacos.”
I watched her and her fiancĂ© dance – sashay – and practice their “moves” for the upcoming Mexico wedding.
It melted my heart.
So, I hoped to melt theirs with “Nacho Tacos” – Chorizo Manchego Avocado Tacos with a little “nacho” action as well!
Nacho Tacos – Chorizo Manchego Avocado Tacos
8 small flour tortillas
8 oz. Manchego cheese, shredded
8 oz. chorizo sausage
1/2 cup corn tortilla chips, broken into small pieces
2 large avocados
1/2 red onion, minced
juice of 1 large lime
1/2 cup green chile salsa
sea salt
fresh cilantro
Heat the chorizo sausage in a skillet over low heat. Stir and cook through for several minutes, until the pork is done.
Meanwhile, smash the avocados with onion, fresh lime juice, and sea salt. Stir in the green chile salsa.
To assemble, fill each tortilla with 1-2 Tbs. chorizo sausage. Top with 1-2 Tbs. broken chips (nacho). Top with the smashed avocado mixture and Manchego cheese.
Finish by garnishing with cilantro and lime slices.
