Brian had an early, early morning team meeting today. So, I thought I’d whip up something nice for those hardworking, BI early bird nerds.
This meeting didn’t call for the traditional coffee and donuts – or even bagel bites and cream cheese.
This morning, it’s cookies for breakfast.
Try dunking these into your Chai today!
Oatmeal Cinnamon Raisin Cookies
- 2/3 cup white sugar
2/3 cup dark brown sugar, firmly packed
12 Tbs. butter, softened
1 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. vanilla extract
1/2 tsp. baking powder
1/2 tsp. sea salt
2 large eggs
1 cup old-fashioned oats
1 2/3 cups all-purpose flour
1 cup raisins - Preheat oven to 375 degrees. In large bowl, beat all ingredients except oats, flour, and raisins with electric mixer on medium speed, or mix with spoon. Stir in oats, flour and raisins.
- Drop dough by rounded tablespoonfuls about 2 inches apart on a parchment or Silpat lined cookie sheet.
- Bake 9 – 11 minutes or until light brown. Immediately remove from cookie sheet to cooling rack.
