Yes, this really is a “thing.” In fact, I just created this so-called thing for a dinner party appetizer recently. I wanted something sweet, but I wanted something savory, and I wanted it all-in-one.
Who doesn’t love a sharp, tangy cheese and the nectar of the bees anyway?
Snackable granola squares: slightly sweet, but elevated by the sharp and savory magic of a really good parmesan cheese. You’ll thank me over and over again, I’m sure.
Parmesan Granola
2 Tbs. coconut oil, room temperature
2 cups rolled oats
3/4 cup dried currants
1 1/2 cup grated parmesan cheese
1/2 cup honey
1/4 cup poppy seeds
1/4 cup black and white sesame seeds
2 very small apples, cored and pureed
1/4 tsp. sea salt
Preheat the oven to 350 degrees. Line a small baking pan with parchment paper.
Combine all the ingredients in a large bowl and mix well.
Transfer to the baking sheet, spreading evenly with a spatula. Bake for about 20 minutes.
Cool completely before cutting or breaking into snacking squares.
