Peanut Butter Orange Cups of Yum
1 1/2 c. pitted dates, soaked (soaking liquid reserved)
6 c. whole oats
3 c. smooth, organic peanut butter (all natural – nothing added, of course)
Zest and juice of 2 oranges
1 tsp. ground cinnamon
1/2 tsp. salt
Dark chocolate chips, unsweetened, shredded coconut, and raw honey
Preheat oven to 350 degrees. Process oats in the food processor to result in an oat flour, of sorts. Transfer to a large mixing bowl. Process dates into a lovely paste. Add date paste, peanut butter, orange zest and juice, cinnamon and salt to the oat mixture and stir well. Add reserved date soaking liquid in very small amounts until the mixture is fully combined.
Line 6 muffin tins with paper liners and fill half way with the mixture. Using your own discretion, layer each cup with chocolate chips, coconut, and a squeeze of raw honey. Top with remaining oat mixture.
Bake for 10-15 minutes, until the yum cups begin to toast around the edges. Remove from the oven to cool – before devouring.
