Well, I completely forgot to photograph the process OR the finished product of these amazingly sweet and salty peanut butter white chocolate cookies UNTIL they were already wrapped in plastic and bows, ready to go for delivery! Whoops.
Salted pretzel peanut butter whipped with honey-roasted and salted peanuts, along with white chocolate chips sure does make for a pretty amazing cookie, though.
Salted Honey Roasted Peanut White Chocolate Chip Cookies
8 Tbs. butter, softened
8 oz. salted pretzel peanut butter
14 oz. sweetened condensed milk
1/4 cup vanilla almond milk
1 tsp. vanilla extract
1 tsp. kosher salt
1 tsp. baking powder
1 tsp. baking soda
2 1/2 cups all-purpose flour
1 1/2 cups honey-roasted peanuts
1 1/2 cups white chocolate chips
Preheat the oven to 375 degrees and line cookie sheets with parchment paper.
Beat together the butter, peanut butter, and sweetened condensed milk until smooth and creamy.
Add the almond milk, vanilla, salt, baking powder, and baking soda and mix well.
Add the flour, 1/2 cup at a time, and incorporate well.
Fold in the peanuts and white chocolate chips.
Form into mounds and flatten onto the parchment-lined cookie sheets.
Bake for 12-15 minutes, until just beginning to brown.
Remove from the oven and cool until ready to eat, eat eat!
