Every year a dear friend of mine “surprises” us with a box of Harry and David pears. While I’m all about organic produce, I must take a moment to fully rave about the quality of Harry and David fruits. Delicious. Unbelievable. Best. Thing. Ever!
Truly, these babies are miraculous. And, after baking a seasonal pear pie not too long ago, I decided to incorporate the last of these gems into dinner: Savory Pear Tarragon Chicken & Homemade Noodles.
Savory Pear Tarragon Chicken & Noodles
Basic Pasta Recipe:
1 cup all purpose flour
1 egg
Pile the flour onto the counter and form a well with the egg. Using your hands, pull the flour into the egg, not over mixing, but creating the perfect pasta dough.
Either using a pasta maker to roll out and cut your noodles, or a rolling pin and knife, form the noodles into thick fettuccine lengths of greatness.
Generously salt a large pot of water and bring to a boil. Cook the noodles immediately, for 3-5 minutes. Drain and set aside.
The Good Stuff:
4 Tbs. butter (yes, that much)
2 ripe pears, thinly sliced
1 medium shallot, diced
1-2 boneless, skinless chicken breasts
sea salt and pepper
2 Tbs. fresh tarragon, finely chopped
Melt the butter over medium heat in a large pot. Add the pears and shallot and sauté until the shallot begins to break down. Season with salt and pepper and add the chicken breast(s). Cover and cook for about 5 minutes before flipping the chicken. Remove from heat and toss the pasta into the buttery mix.
Serve with fresh tarragon sprinkled on top.
