As I seem to have a knack for creating some of the best grilled cheese sandwiches out there (I’m not tooting my own horn ~ really ~ this is something I have been TOLD), I decided to ring out one more before diving full force into the holiday baking season.

Not that you can’t make an awesome grilled cheese sandwich any day of the week, any time of the year…in fact, those melted cheese sammies are quite comforting amidst the hustle and bustle stress of the season.

But this super duper sammy doesn’t necessarily fit into the ordinary grilled cheese category.

It’s extraordinary.

It’s beyond any expectations you may have.

Smoked cheddar – yes, an essential component to the unique flavors in this warm, melty, crusty, salty delight.
Genoa salami – yes, another vital part of the concoction.

But the two secret ingredients, which I’m assuming most would never quite guess, are:

  1. mayonnaise 
  2. bread and butter pickles

Yes. Instead of the typical slathering of butter on both sides of the bread, mayonnaise does the trick. It creates a gorgeously sweet and salty crunch on the crust, without the often too oily and by and by burned byproduct of butter. It’s like magic!
Then, loading up the sammy with pickles, to play on the smokey salt of the cheese and salami – the tang is just heavenly.

It’s kinda like a grilled Cuban, but not really.

You’ve got to try this one.

Oh, one more thing, this is a DAGWOOD of a sammich…I tell you. This puppy was stuffed to the brim and pretty darn tough to flip.

Good luck.

And, do yourself a favor and fry up some extra pickles on the side.

Smoked Cheddar Salami Grilled Cheese

2 thick slices of the best sourdough bread around
2 Tbs. real mayonnaise
4 oz. thinly sliced Genoa salami
3 oz. thinly sliced smoked cheddar cheese
4-6 bread and butter pickles

Preheat a cast iron skillet to medium heat.
Slather each side of the two pieces of bread with the mayo. Stack the salami, cheese, and pickles atop one slice of bread. Top with the second slice.
Cook 2-3 minutes on each side in the skillet. GOOD LUCK flipping this sucker.

That’s it. Enjoy yourself like crazy.
