Not that you have a whole lot of Thanksgiving turkey leftover hanging around in your fridge at this point (I sure hope you don’t), but maybe you have some in the freezer or just feel like creating the best turkey sandwich of your life? Who knows. But, with homemade artisan bread and smoked turkey with brandied pear and brie AND cranberries all together in this monster of a sandwich, you certainly will not need Ross’ “Moist Maker.” I promise.

Smoked Turkey Brandied Pear Brie Sandwich
2 slices Easy Artisanal Bread (fresh and out of the oven…or split the recipe into rolls)
3 oz. smoked turkey breast, thinly sliced
1 medium pear, very thinly sliced
2 Tbs. salted butter
1 Tbs. brandy
2 oz. fresh Brie cheese, sliced
1/4 cup dried cranberries
Prepare the bread as directed.
Heat the butter in a large skillet over medium heat. Add the pears and sauté until golden. Pour in the brandy and cook for a few more minutes, but not too long.
Transfer the brandied pears to a plate to cool.
Save the remaining brandy-butter (melted) to drizzle over the bread or roll – each side.
Layer the sandwich with the sliced Brie, the smoked turkey, and the brandied pears, along with a sprinkling of dried cranberries.
Enjoy!
