Who doesn’t love a S’more?

Honestly…

I want s’more ~

graham cracker goodness sandwiching ooey gooey marshmallowy madness and then smothered in melted chocolate. C’mon.

The best part though ~ childhood memories.

Camping in the mountains, perched by the evening fire, laughing away and watching the gooey madness drop in to the fire off a roughly peeled skewer.

Marshmallow flambé?

More chocolate than necessary?

Crumbly crackers and sickly sweet goop running down your chin and fingers?

Yes, it’s all there.

We recently had the opportunity to relive that childhood memory and dream beneath the mountain stars.

And with the leftovers, our dreams floated into the clouds.

S’More Cloud Bites, that is.

s’more (sometimes spelled smore) is a traditional nighttime campfire treat popular in the United States and Canada, consisting of a roasted marshmallow and a layer of chocolate sandwiched between two pieces of graham cracker. National S’mores Day is celebrated annually on August 10.

S’more Cloud Bites

1/2 package Honey Graham Crackers
1 stick butter (1 cup) + 1 Tbs., melted
1 package marshmallows
1 cup heavy cream
1 cup chopped pecans
1 medium Hershey’s chocolate bar

In a high speed blender or food processor, process the graham crackers until powdered. Combine with the melted butter (1 cup) and press into the bottom of an 8×8″ glass baking dish for the crust.
Meanwhile, in a large nonstick skillet, melt the remaining butter and add the marshmallows. Stirring constantly, melt the sugared puffs. Reduce heat to very low and fold in cream and pecans.
Once fully combined, pour the marshmallow cloud mixture over the prepared crust. 
Chill at least 1 hour.
Once cooled, grate the chocolate bar over the clouds and chill once again before cutting into bite-sized clouds of goodness.

Not Paleo. Not Primal. Probably not vegan. And not “clean.”

But the childhood memories of s’mores with the family outweighs any dietary concern. Just do it. Today.
