So, one of my favorite ways to play is to walk into a kitchen, raid the cupboards, and using only what’s available, simply create.
It’s fun. It’s fantastic. And, it’s always quite flavorful.
Valerie tells me every once in a while, “I need to clean out my cupboards and give you all the goods to bake.”
Yes. Please do.
And she did.
Today she gifted me with instant apple cider powder and chopped pecans. This was a delightful day for experimentation.
And, given that I had no butter in the house (for shame, I know), I opted for a chewy savory take on the instant apple cider cookies – those with olive oil!

Spiced Apple Cider Pecan Olive Oil Cookies
Spiced Apple Cider Pecan Olive Oil Cookies
3 large eggs
1 cup olive oil
2 cup instant spiced apple cider
1 tsp. baking soda
1 tsp. sea salt
3 cups all purpose flour
2 cups chopped pecans
Preheat the oven to 375 degrees.
Beat together the eggs and olive oil until emulsified.
Whisk in the instant apple cider and make sure everything is well combined.
Stir in the baking soda, salt, and flour, mixing well.
Fold in the chopped pecans.
Allow the dough to sit for 10 minutes.
Scoop 1″ balls on to parchment lined cookie sheets and bake for 12 minutes.
Cool slightly before delightfully devouring.
