Sri Lankan Coconut Lime Hot Wings
2 lbs. party hot wings
1 cup Sri Lanka Coconut Lime Hot Sauce from Serious Foodie
1/2 cup gluten free white rice flour
1 red bell pepper, seeded and diced
1 small shallot, peeled and diced
1 cup toasted coconut flakes
Preheat the oven to 400 degrees.
Thoroughly pat dry the chicken wings and fully dredge each in the gluten free flour mixture (in a small bowl), transferring to a square baking dish.
Once all the chicken has been coated in flour and sauce, transfer to the oven, douse with the sauce, and bake 45 minutes, or so, until fully cooked and fragrant.
While the chicken is cooking, chop the veggies.
Once the wings are complete in the oven, plate over a pile of toasted coconut flakes and top with raw veggies and any additional sauce! Top with fresh cilantro, if desired.
Lots of napkins or finger lickin’ needed! ๐
