Buttery, sweet and salty delicious shortbread mingled with Righteous Cacao RAW Divine Mint Chocolate Bites AND fresh mint!

St. Patty’s Day Mint Chocolate Shortbread
1 cup butter, melted and cooled (Kerrygold Irish Butter is THE BEST in this situation)
2 cups all purpose flour
1 cup powdered sugar
1 tsp. baking powder
1/2 tsp. vanilla extract
1/4 tsp. sea salt
10 oz. Righteously Raw Cacao Divine Mint Bites, finely chopped
2 Tbs. fresh mint, finely chopped
Preheat the oven to 325 degrees.
Mix together the melted and cooled butter, flour, sugar, baking powder, vanilla extract, and sea salt. Stir well until a somewhat stiff dough forms. Fold in the Divine Mint Bites, as well as the chopped mint.
Press flat into a parchment lined baking dish, smoothing all surfaces.
Chill for 30 minutes.
Bake for 30-40 minutes, until golden brown.
Garnish with additional mint leaves.
