Although I don’t eat it often often, I really do love fresh sweet corn.
And how true is it that this fruit of the earth is so naturally sweet?!?
Fresh of the cob – I mean fresh, these kernels are pure sugar.
Perhaps that’s one reason why I’m an infrequent consumer.
In any case, the little beads of candy, so to speak, provide a surprising enhancement to the typical garlicky-parmy-olive oil amazingness of pesto.
Yes, believe it or not, this sweet, rich, corn pesto is truly the besto.
Think of the versatility ~
Over pizza, pasta, toast, potatoes, greens, eggs, yogurt, feta, salad…
It’s the bomb.
Sweet Corn Pesto
1 cup organic corn
1/2 cup grated parmesan cheese
1/4 cup extra virgin olive oil
2 cloves garlic
1/4 tsp. sea salt
Using an immersion blender or high speed speed blender, puree all ingredients until still slightly chunky.
Serve over pizza, pasta, eggs, greens, or anything at all!
It’s sweet, it’s savory, it’s smooth. It’s YUMMY!
