Sweet Onion Old Bay Spiced Chicken Gruyere Meatloaf
1 large sweet onion, roughly chopped
2 Tbs. butter
sea salt and pepper
1 Tbs. Old Bay Seasoning
1 lb. ground chicken
1 lb. ground pork
3 cups grated Gruyere cheese, divided
3 large eggs
1/3 cup breadcrumbs
1 Tbs. mayonnaise
1 Tbs. mustard
chopped parsley
In a large pot, melt the butter over low heat.
Add the onion and sauté until translucent, seasoning with salt and pepper and Old Bay.
Remove from heat and transfer to a large bowl.
Add the ground chicken, pork, eggs, breadcrumbs, mayo, and mustard.
Using your hands, or a stiff spatula, mix until very well combined.
Once completely mixed, fold in all but 1/3 cup of the grated cheese.
Preheat the oven to 375 degrees.
Line a large loaf pan with parchment paper and transfer the meatloaf mix to the prepared pan.
Top with the remaining cheese.
Bake for 50 minutes, until cooked through and the cheese is bubbling brown.
Cool until ready to slice and serve. (Overnight is always best).
Top with chopped parsley and serve with mashed potatoes.
