I knew I wanted to bake banana bread – actually, banana chocolate bread, as it’s Brian’ all time favorite.
My neighbor picked up some bananas and dark chocolate chunks for me at the store. And, even though I’m low on sugar at the house right now, I didn’t ask for that on her market trip. I wanted something different. Something dense, but light, ooey, but gooey, custardy, yet fluffy – I wanted sweetened condensed milk!
So, here goes the Sweetened Condensed Banana Chocolate Chunk Bread.
You’ll love it. You really will.
Sweetened Condensed Banana Chocolate Chunk Bread
8 Tbs. butter (1 stick), melted
2 large bananas, mashed
2 large eggs
14 oz. sweetened condensed milk
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. vanilla extract
1/4 tsp. sea salt
2 cups all purpose flour
10 oz. dark chocolate chunks
Preheat the oven to 350 degrees.
Using a fork, mash together the “mashed” bananas, eggs, and butter. Whisk until well combined.
Add the sweetened condensed milk and stir well.
Add the baking powder, baking soda, sea salt, and vanilla and mix again.
Fold in the flour and then the chocolate.
This batter is a little thicker than traditional banana bread batter.
Grease and prepare a loaf pan.
Pour the batter into the pan and bake for 50 minutes, until a toothpick inserted comes out clean.
Cool for 30 minutes, but cut into the bread while its still warm to enjoy the ooey-gooey deliciousness of the melted chocolate.
