Typically, meatloaf tends to be composed of beef and or pork – a little tomato paste or catsup, some cracker crumbs, and cheese. It’s great – good comfort food. But, the same variation (even if you add bacon) can get a little mundane.
At the same time, turkey tends to be too dry for a loaf in and of itself. Too bland too. Thus, for this recipe I compromised and added both pork and sour cream for moisture, and lots and lots of dill and havarti cheese for a unique and fabulous flavor. Naturally.
Havarti is a washed-curd cheese, which contributes to the subtle flavor of the cheese. Havarti is an interior-ripened cheese that is rindless, smooth, and slightly bright-surfaced with a cream to yellow color depending on type. It has very small and irregular openings called eyes distributed throughout. Often times it is made will dill seasoning.
Turkey Dill Havarti Meatloaf
1 lb. ground dark meat turkey
1 lb. ground pork
1 sleeve Ritz crackers, crumbled
1 cup sour cream
2 large eggs
6 oz. dill havarti cheese, chopped or shredded
1 bunch fresh green onions, chopped
2 Tbs. fresh dill, chopped
sea salt and pepper
Preheat the oven to 375 degrees.
In a large bowl, using your hands smoosh and mash all the ingredients together until very well combined.
Transfer the meat mixture to a parchment lined loaf pan.
Place onto a baking sheet and bake for 70-90 minutes, until the meat is cooked through and the cheese begins to crisp and brown.
Cool completely (or refrigerate overnight) to set before slicing and serving with a helping a veggies and wild rice.
