They are light, fluffy, chewy, bright, and delightfully delicious.
They were STOLEN from my neighbor’s front door. Can you believe that? I guess they were THAT good!
Vegan Coconut Macadamia Nut Cookies
1 cup coconut oil, room temperature
14 oz. sweetened condensed coconut milk
3/4 cup sugar
1 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla extract
pinch of sea salt
2 – 2 1/4 cups all-purpose flour
1 1/2 cups sweetened, dried coconut flakes
1 cup macadamia nuts, chopped
Preheat the oven to 375 degrees.
Line baking sheets with parchment paper.
Cream together the coconut oil, sweetened condensed coconut milk, sugar, baking soda and powder, vanilla, and salt, until smooth.
Add the flour 1/2 cup at a time, until everything has bound together.
Fold in the coconut and macadamia nuts.
Form 1″ mounds of dough on the parchment-lined cookie sheets and bake for 10-13 minutes, until golden brown.
Remove from oven and allow to cool and crisp.
